Keep food cool

Leave raw meat, fish, and dairy-based sides in the fridge or a cool box until needed. Bring food out in batches rather than staging everything on a warm table for dramatic effect.

Cook thoroughly

Use a food thermometer where possible, especially for chicken, sausages, and burgers. Charred outside does not guarantee cooked inside.
